Travis has learned his trade around the world

Now a chef in Mansfield, he is cooking local ingredients with simplicity

RISING CHEF: Travis Boltong in his kitchen, still with his grandfather’s spoon at hand.

THE Magnolia Restaurant is close to the heart of the Mansfield Courier, being the original home of the newspaper’s owner Harry Amor.

However, in gastronomic circles, it is better known as the base for one of Victoria’s rising chefs, Travis Boltong.

Travis was born in 1977 in Hampton Park.

From the time I was young, I was my grandmother’s helper in her kitchen.

“I still have my grandfather’s World War I spoon my grandmother passed on to me when I was 12.

“It has travelled the world with me and I have tasted so much with that spoon.”
